TOMATO PREPARATION  1.8kg fresh tomatoes 1 tablespoon of salt Roughly chop the tomatoes.  My cooking tip is use a serrated knife for cutting tomatoes.  A bread knife is perfect.  The serrated edge saws easily through the skin and slices through nicely so you don’t end up with squishy tomato mess. Put the roughly chopped tomatoes in a big bowl.  Sprinkle over the salt and mix through gently with your hands. Cover the bowl and leave an hour or two. The salt draws out water from the tomatoes so you’re not having to cook them forever to drive off the water naturally occurring in the fruits. in Part 2 we’ll put together all the other ingredients and learn to make a spice bag that will infuse the ketchup with lots of lovely flavours.
