Add sugar to a dry pot on medium heat. 2. Let it melt down slowly, stirring until it turns deep brown 3. Carefully add a splash of hot water to stop the cooking (watch for the sizzle!) 4. Add salt, soy sauce & vanilla (optional) 5. Let it cool, as it cools it’ll thicken up.
